Gluten-Free Chocolate Chip Cookies (edited recipe)

One thing's for sure about this gluten-free baking business, it's forcing me to become more precise with my baking. I'm still trying to figure out all the tricks of the trade; it can be a bit tricky. It requires patience and precision. Silly as it may sound, I'm somewhat tempted to bake the same recipe using a different flour each time to really get a 'feel' (or taste) for each one. I think it might allow me to experiment more successfully, or confidently :). Right now, I'm pretty much doing what I used to do before, and that would be 'studying recipes'.

I just deleted the entry where I talked about the first recipe. I decided to keep these photos of the first recipe. After baking gluten-free for a few months, I came up with a much tastier recipe. So far, this one is my favorite gluten-free chocolate chip recipe :).

Gluten-free flours absorb liquid differently than wheat flour. If the batter or dough looks tighter than you expect, rest it for ten minutes so starches can hydrate, then judge the texture again before adding more liquid. Certified gluten-free oats, baking powder, and chocolate chips matter when you are baking for someone who must avoid gluten cross-contact.

Cookie texture is mostly about fat temperature and bake time. Chilled dough spreads less; a minute less in the oven keeps centres soft after cooling. For bar cookies and granola bars, line the pan with parchment so you can lift the slab out cleanly before cutting.

Storage: wrap tightly once cool. Most baked goods freeze well for up to a month; thaw at room temperature, then refresh briefly in a warm oven if you want a just-baked edge.
